The chile piquin is has an almost citrusy flavor. It is a very small (about 2cm) chili that is commonly used in sauces, soups, stews, hot vinegars and great for pickling applications. When fresh they are green in color and mature into a bright red. This little guys are very hot, rating 100000 to 140000 on the scoville scale. Like all the dried chiles, the piquin peppers can be simmered in a hot liquid until soft and then chopped to add to any dish that requires heat. The chile piquin can also be used dried for pickling, imparting their wonderful flavor and heat to the picking liquid. It can also be added to a blender or food processor to grind into a powder, which can be used the same way as cayenne pepper (because of its high heat) or as a seasoning for any dish that calls for chili powder or Cajun seasonings.
