Dona Arepa Yellow corn flour is a very popular South American product used mainly in the countries of Venezuela and Colombia to make arepas (similar to gorditas). This white precooked cornmeal can also be used to make tamales, empanadas, grits, polenta, hush puppies and even for breading fish, shellfish or chicken. It is also used on the traditional Venezuelan dish Hallacas, a delicious large tamale wrapped in banana leaves and filled with meat, pork, chicken and vegetables. To make the dough for arepas or empanadas, just add warm salted water into a bowl and a tablespoon of vegetable oil. Slowly incorporate the Dona Arepa yellow cornmeal into the liquid until the dough is hard enough to roll into a ball but soft enough were it doesn’t crack easily. The balls of dough are patted by hand into a disc shape and can be cooked in a griddle, oven or fried. After the arepa is cooked is then split in half lengthwise and stuffed with the desired filling. Arepas are both made with white and yellow cornmeal, with the white variety being the most popular.
