Goya Golden Hominy Corn or Maiz Trillado Amarillo in the 14 oz plastic bag looks like yellow popcorn kernels. However, dry Goya Golden Hominy Corn comes from a type of field corn called yellow dent. It has a tough outer skin that is either ground up for meal or undergoes a process called nixtamalization. Nixtamalization is a fancy word for the process of soaking this Goya corn in a boiling mixture of water and calcium oxide. This process peels the outer hull from the corn, leaving a soft, thick puffy inside known as whole hominy. Not only does this process release the hull, it also releases the important nutrient, niacin. Its most popular use is in Mexican pozole or in menudo, but can be used for grits, in casseroles, soups or stews. There are no good reasons to not be using this dry Goya corn product. Preparing Goya Golden Hominy Corn from scratch will yield a more intensely flavored and textured hominy, making it well worth the effort.
